We know you may be thinking “Irish everyday could be St. Patrick’s Day.” While time may move on, celebrations can continue, and we have 3 healthy and delicious recipes you can make with your child all month long that will sham-rock. Test your luck on making the three recipes below!  

Spinach Tortilla Quesadillas  

These fun quesadillas are filled with vitamins and nutrients by utilizing spinach tortillas instead of the traditional flour. You can even fill your quesadillas with veggies like bell peppers, zucchini, mushrooms, tomatoes or onions for even more added nutrients! When serving, use cookie cutters to cut the quesadillas into fun shapes, like shamrocks or horseshoes.  

Rainbow Fruit Cups 

This recipe is totally customizable and a great recipe for little hands who want to help in the kitchen. In a 12-ounce cup, layer cut-up fruits in rainbow order! Have your child help with this layering and name the fruits and colors as they go. Use this guide to help start your first cup: RED strawberries, ORANGE mandarins, YELLOW bananas, GREEN grapes, BLUE blueberries, PURPLE plums.   

Green Smoothie 

This smoothie is equally as tasty as it is vibrant! In a blender, mix ice, 1/2 cup Greek yogurt, 1/2 cup baby spinach, 1/2 cup fruit of your choice (can be frozen or fresh) and 3/4 cup milk or juice. Blend until smooth or your desired consistency. For even more protein and healthy fats, consider adding a tablespoon of nut butter or 1/4 of an avocado to the smoothie.
