Preheat oven to 375°F. Grease a
large baking sheet with nonstick cooking spray or line with a silicone baking mat.
In a large bowl, sift the cake
flour, baking powder, and salt together twice.
In a separate bowl, beat together
the butter, milk, egg substitute, vanilla, and fructose or sugar substitute. Combine
the
wet ingredients into the dry ingredients and mix thoroughly.
Drop cookies onto the baking sheet
by the teaspoonful and bake for 20 minutes or until a toothpick inserted in the center
of a cookie comes out clean.
