Preheat oven to 350°F. Lightly oil
a 13-by-9-by-2-inch baking pan.
In a large mixing bowl, combine the
apples with the sugar, raisins, and pecans; mix well. Let stand 30 minutes. Stir in
the
oil, vanilla, and egg.
In a separate bowl, sift together
the flour, baking soda, and cinnamon. Stir into the apple mixture about one-third
at a
time. Transfer mixture to prepared baking pan. Bake 35 to 40 minutes. Cool cake slightly
before serving.
